We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.

Fake fermentation or fruit hype

So what does that actually mean? Jairo Arcila Peach is a coffee that has undergone an enhanced fermentation process. Immediately after harvesting, the coffee cherries were left to ferment for 72 hours alongside peach pulp and wine yeast. Only then was it subjected to further, more traditional processing to extract the beans from the fruit. The result is a burst of fruitiness that will hit you the moment you grind the beans, and it only gets better from there. Is it subtle? Not quite. This coffee hits you straight away and takes no prisoners. If you’re a fan of balanced, classic beans, this isn’t for you. But if you like experiments, intense flavours and aromas – you won’t be disappointed. We’re eagerly following Jairo Arcili’s latest ideas and preparing to launch more coffees featuring ‘fake fermentation’!
